Ingredients:

 

  • [wp-svg-icons icon=”checkmark” wrap=”i”] Half a kilo of boneless chicken breasts
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 2 white onions
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 1 tablespoon of garlic
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 1 tablespoon of ginger
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 1 teaspoon of chilli powder
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Half a teaspoon of turmeric
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 150 ml of single cream
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 1.5 tablespoon of chicken tikka masala powder (can be found in most Asian grocers)
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 2 tablespoons of olive oil
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 400g of linguine
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Salt
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Pepper
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 150ml full-fat milk
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Grated mozzarella
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Grated cheddar cheese
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 20g butter
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Ground garam masala
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 2 green chillis
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Coriander (optional for garnish)
  • [wp-svg-icons icon=”checkmark” wrap=”i”] Mango pickle oil (optional)
  • [wp-svg-icons icon=”checkmark” wrap=”i”] 1 tablespoon of cumin seeds

 

Method:

 

  1. Take the chicken breasts and cut into small bite sized pieces
  2. Take the pieces and soak it in water – this creates a brine
  3. Take the tablespoon of cumin seeds and roast in fry pan for 30 seconds – do not add oil until after as the flavour comes out prior to adding the olive oil
  4. Chop your two small onion, then add in
  5. Sautee the onions until light brown
  6. Chop your green chillis and add in the fry pan
  7. Add in the spices: chilli powder, turmeric chicken tikka masala powder
  8. Let it sit and stir for a couple minutes
  9. Take it chicken and drain, then add into the frypan
  10. Let the chicken cook until white on the outside
  11. Add in single cream and full-fat milk
  12. Add 500ml of water
  13. Let that simmer for
  14. minutes on low heat
  15. Add in grated mozzarella and cheddar and mix in
  16. Let it keep simmering on low
  17. While the sauce and chicken is still cooking, start to prepare your pasta
  18. Cook your linguine – add in olive oil to avoid pasta sticking to the pot
  19. Once pasta is ready, add in your sauce
  20. Garnish with more grated cheese
  21. Garnish with coriander and mango pickle oil if you prefer
